When I was in a panic the day after my daughter was diagnosed with Celiac Disease, I ran to Whole Foods and grabbed a bunch of gluten-free foods. I knew that dessert would be a challenge, since I like to bake most of our desserts from scratch and almost all the things I usually make contain wheat, and therefore, gluten.
I figured brownies would be a good choice, because a good brownie recipe usually uses very little flour. King Arthur has always been a 'go to' brand for me when baking, so I thought I'd try the King Arthur Gluten Free Brownie Mix.
I baked these up, unsure of my technique since the lack of gluten required more mixing than I'm used to doing. I poured these in the pan, threw them in the oven and they looked to be baking up beautifully. They did take longer to cook than the directions indicated, but my oven has never been very precise.
How were they? Absolutely delicious! In fact, I think they might be better than regular brownies. They had a nice top layer with a little bit of crunch -- you know, that crackly top you like on a brownie -- and a rich, gooey interior. There were no off flavors or odd texture -- just pure brownie goodness.
I can highly recommend this product and give it a 5 out of 5!

The King Arthur Flour website and blog has a fair amount of gluten-free recipes, too. We love King Arthur!

Surprisingly, Betty Crocker has great GF mixes, too. Plus, their website has tons of great recipes. Dessert is easy with so many great mixes to use. Other mixes I like is Gluten Free Pantry and Namaste. m
