Blueberry Crisp

Pete is beginning to wonder what's gotten in to me. I've been cooking and baking -- something I rarely find time for. Last night it was Pad Thai for dinner and for dessert, blueberry crisp.
Blueberries are coming into season and were super cheap at the grocery, so I bought a quart. I couldn't find a blueberry crisp recipe that had all the elements that I wanted, so I made one up on the fly with ingredients I had on hand. Here's the recipe:
1 Qt Blueberries
1 Tbsp Tapioca
2 Tbsp Orange Juice
1/2 C Whole Wheat Flour
3/4 C Old Fashioned Oats
1/2 C Butter
1 C Brown Sugar
1 Tsp Cinnamon
1/2 Tsp Salt
Preheat oven to 375. Grease 8 X 8 pan. Combine first 3 ingredients and put in pan. Mix the remaining ingredients with a pastry blender until crumbly. Pour on top of blueberry mixture.
Bake for 40 min or until top is golden brown. Serve with vanilla icecream, if desired.
That's it! Super quick and easy. And the husband gave it a thumb's up. It was so yummy that I'm planning to have it for lunch today.
Yummy. I have some blueberries I've been wondering what to do with and this will be perfect. Crisps are always a hit at my house. Tastey and not a lot of work.

Looks yummy. Hard to make stuff like that just for me. I would eat the whole thing, and I can't afford to do that. Hope all is going well with the copyright situation.

Now that's something I could make for the Hubby. He love's blueberry anything. I love to bake, only from scratch. But Man I have to have a recipe! Mmm..Might have to go get blueberries in the morning. Thanks!

That looks yummy. I have a recipe for blueberry cobbler that I found online a couple of years ago. Let me know if you want it. It's the simplest thing ever.
Your recipe looks great and I bet it would work for different fruits as well. I may try this on the weekend. Thanks for sharing the recipe.

I'm going to give your recipe a try. My kids have developed an affection for blueberries and I have no idea what to do with them except hand them a pint and say, "Here ya go!"
